General sanitation - good.
- Walk-in cooler at 4.0 deg C at the time of inspection.
- Front prep cooler at 3.4 deg C (top and bottom).
- Back prep coolers both at 1.8 deg C.
- Upright cooler was at 2.2 deg C.
- Bar coolers were at 4.0 deg C.
- Kitchen upright freezer was at -18.0 deg C.
-Storage area freezer was at -19.0 deg C.
-Storage area chest freezers were at -18.0 deg C.
-Hot holding was at 60.0 deg C.
-Chemical dishwasher had a final rinse of 100 ppm chlorine on the dish surface (minimum of 50ppm required for sanitizing).
-All handwash stations are accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Bleach sanitizing pails and spray were tested at 200 ppm.
-Raw meats stored below ready-to-eat foods.
-No signs of pests noted at the time of inspection.
- Glass-washer at 100 ppm of chlorine.
- Ice-maker - clean/a scoop stored safely at the time of inspection.
