Observation: Found mice dropping on the floor beneath the 2-comp sink area; on the lowest shelves of the storing unit beside the 2-comp sink; and on the lower shelves beside the upright stainless steel freezer. Mice droppings carry disease.
Corrective Action(s): Clean up the droppings, wash and sanitize the surfaces to remove any pathogens.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: There are openings in the wall under the 2-comp sink and in the staff washroom. These opening will allow pests to enter the premises.
Corrective Action(s): Immediately block these openings with wire mesh (1/4" of smaller), metal plates, and/or tightly stuff the opening with steel wool and then use expanding foam.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation (CORRECTED DURING INSPECTION): Food containers being covered with laminated menus, plastic bags, and paper bags. These materials are not food grade, durable or cleanable. Chemical contaminates could get into the food.
Corrective Action(s): Immediately stop using the mentioned items to cover food. Food grade materials (aluminum foil; saran wrap; or lids made of glass, stainless steel or hard plastic) must be used to cover food and food containers.
During the inspection, the owner replaced non-food grade covers with plastic lids.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation (CORRECTED DURING INSPECTION): Mesh strainer/colindars found broken and held together with pieces of wire. This is unsafe, as pieces of mesh could fall into food and become a choking hazard.
Corrective Action(s): Immediately discard all damaged utensils, equipment and colindars. Purchase new ones and use inspect all utensils and equipment daily for damage. During the inspection, the owner discarded the damaged colindars and replaced them with new ones.

310 - Single use containers & utensils are used more than once [s. 20]
Observation (CORRECTED DURING INSPECTION): Grease soaked paper bags and cardboard are not being discarded at the end of each day, or after use (being reused). These items will attract pests/rodents as they are a food source.
Corrective Action(s): Throw away cardboard every night and use new ones the next day, and throw away paper bags after one use. During the inspection, the owner discarded all grease soaked paper bags and will discard the cardboard on the floor at the end of the night.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezer was -21C; hot holding unit above 60C; and thermometers present.
- High temp dishwasher had a rinse cycle temp of 71C at the plate's surface, as per max/min thermometer. Staff are aware that the wash temp must be over 150F and rinse temp must be over 180F prior to putting a cycle through.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottle had [Cl2] above 200ppm.
- All foods stored in food grade containers; covered; labeled; foods stored in groups with raw proteins below RTE foods; and all foods stored 6" off the floor on shelves or racks.
- No expired foods in use or for sale. FIFO rules being followed.
- Valid FoodSafe certified staff present.
- All previous violations have been addressed.
- General sanitation level it good.
**Increase the frequency the exhaust hood filters are cleaned to twice a month, as there is accumulated grease, dust and cobwebs on them***
