Observation (CORRECTED DURING INSPECTION): 1) No food-contact surface sanitizer was readily available for use at time of inspection. REPEAT VIOLATION.
2) Staff were aware dishwasher was not working, however the three-compartment sink was not properly set up for manual dishwashing. REPEAT VIOLATION.
Corrective Action(s): 1) Staff prepared fresh bleach sanitizer solution at time of inspection. 100 ppm chlorine residual detected.
2) Set up the three-compartment sink for manual dishwashing: sink 1) hot soapy water sink 2) clean hot water for rinsing sink 3) 100 - 200 ppm bleach sanitizer solution for sanitizing dishes.

Observation: 1) Mouse droppings noted along walls in dishwashing area and in corner by mop sink.
2) A siginifcant number of flies were noted inside the premises.
Corrective Action(s): 1) Remove all mouse droppings and disinfect affected areas with 1000 ppm bleach solution. Check for new mouse droppings on a daily basis and clean/disinfect as needed.
2) Contact your pest control company for servicing for flies.

Observation: Deep cleaning needed around unused cooking equipment, around dishwashing area, and around the mop sink and storage area.
Corrective Action(s): Ensure deep cleaning is done at least once a week.
Correct by: Immediately.

Observation: Dishwasher was not working again.
Corrective Action(s): Service your dishwasher, and ensure regular maintenance for this machine is done. All dishes to be washed manually in the three-compartment sink in the meantime.

Comments

- Hand sinks were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Reviewed requirements for having food-contact surface sanitizer readily available during all hours of operation. (See violation code 302 above)
- Reviewed manual warewashing instructions (See violation codes 302 and 308 above)
- Walk-in cooler and pizza prep cooler measured at 4C or colder
- Freezers measured at -18C or colder
- No hot-holding at time of inspection.
- Food storage practices satisfactory.

**Improvement in sanitation is STILL required, especially around the dishwashing and storage areas. Monitoring for rodent droppings must be done on a daily basis, and droppings must be removed and affected areas thoroughly bleached whenever droppings are found.
