Corrective Action(s): Obtain sink plugs for the 2-compartment sink for warewashing. Wash, rinse, sanitize and air dry using the 2-compartment sink for equipment such as knivies, cutting boards, and parts of the band saw and meat grinder. The 2-compartment sink must be filled up with detergent water in one compartment and a sanitizing solution in the second compartment.

Meat Processing:
Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
Chlorine spray bottle measured at 200ppm. Bleach (i.e.: chlorine) available on-site. 2-compartment sink available for manual warewashing.
Operator informed that band saw and meat grinder cleaned and sanitized after each-use.
Walk-in cooler and display cooler measured at 4C. Chest freezers measured at -18C.
Meat covered from possible cross-contamination.
No signs of pest observed.
