Observation (CORRECTED DURING INSPECTION): Tapioca pearls/bubble tea have been added to menu. Staff state cooked tapioca was being stored for up to 5 hours at room temperature.
Corrective Action(s): Moved to cooler during inspection. Do not leave cooked tapioca to sit at room temperature for more than 4 hours - either refrigerate, or hold at a temperature above 60 C.

Comments

*Hot holding temperatures in steamer unit on burner were measured at approximately 60 C. Ensure temperatures in food warmers are maintained at 60 C or higher at all times.
*No food observed in area outside back door to kitchen.
*Bleach sanitizer measured at 100-200ppm in spray bottles and cloth buckets.
*Meat slicer has been removed from premises.
*Note: discussed room temperature egg storage with operator during inspection. Ensure eggs are not stored for more than 2 hours at room temperature - keep these in the cooler.
*No other concerns at this time.
