Observation:
Rubber mats in the dishwashing area dirty.
Some areas of the kitchen have debris build up.
Corrective Action(s):
Improve general sanitation of the kitchen. Weekend was busy with Super bowl.
Ensure to follow cleaning schedule and sanitation plan to keep premises in sanitary condition.

Observation:
1.Paper towel dispenser beside dessert station was not working.
Battery requires replacing.
2.Prep line cooler condensating (middle of the kitchen area) on the bottom storage cooler.
Corrective Action(s):
1. Ensure paper towel dispenser is working properly. Replace battery.
2. This prep cooler is being serviced. Operator scheduled technician fix the cooler problem

Sanitizer buckets had 200 ppm (quats).
Prep line coolers were at 3-4 deg C.
Walk-in cooler at 2-3 deg C.
Walk-in freezer was at -18 deg C or below.
Hot holding for soup/meat sauce was at 60 deg C or above.
Walk-in beer cooler was at 3-4 deg C.
Temperature log was available and up to date.
Dishwasher had chlorine residual of 100 ppm at plate surface.
Service area:
Ice scoop stored in sanitary manner.
Line cooler was at 3-4 deg C.
Freezer for ice cream was at -16 deg C.
Bar area:
Coolers at 4 deg C.
Staff washrooms and dining room washrooms were clean and provided with sanitary supplies.
Staff - wearing clean uniforms and hair restraint.

Items from previous inspection:
Code 311 corrected. Missing tiles have been replaced and re-grouting done.
Code 209 corrected. Light cover over food prep area replaced.
