Observation: Equipment/utensils/food contact surfaces not maintained in sanitary condition.
Observation: ice-machine had build-up of mould/mildew along the ice-tray and hinges of the chamber.
Correction: Stop the use of the ice-machine until the equipment is thoroughly cleaned and sanitize. Empty out the ice-machine and thoroughly clean and sanitize the chamber and all other components as per the manufacturer's instructions. In future, increase the frequency of cleaning the ice-machine.
Rationale: Inadequate sanitation of equipment or food contact surfaces can contaminate food and cause a foodborne illness.

1) Observation: Ice scoop was stored inside the ice machine with handle touching the ice.
Correction: The scoop was re-positioned so the handle did not contact the ice. Operator agreed to keep the scoop in a clean container.
Rationale: Scoops are handled by staff and are contaminated. They should not be stored in food as that can cross-contaminate the food items and cause a foodborne illness.
2)Observation: Clean cups were stored under the soap dispenser and right next to the hand washing sink.
Correction: the cups were relocated at the time of inspection.
Rationale: The use of the handwashing sink can splash dirty water onto the clean cups and cause a contamination.

Observation: The handsink in the staff washroom was not draining water effectively.
Correction: Have the drain pip serviced to ensure water is drained properly. Operator confirmed that a plumber is expected to visit today to look at the sink.
Rationale: Pooling water in the handwashing sink causes splashes and discourages the use of the sink. This can cause inadequate or ineffective handwashing which can contaminate food and cause a foodborne illness.

Routine inspection of the food premise conducted.

Temperatures
Walk-in cooler was holding food at 2.8C (cream sauce and tomatoes were probed)
Single-door upright freezer was holding food at -21C
NOTE: The freezer has a lot of build-up of ice which may affect function in future. It is recommended that the freezer is defrosted.
Chest freezer (bar) was holding food at -19C.
Preparation cooler top inserts were holding food (tomatoes and sauces) at 3C. The bottom was holding food (ribs) at 2.3C.
Glass double-door display cooler was holding food at 3.8C (lasagna/pie was probed)
Under-counter bar cooler was holding drinks and milk at 3C.
There was not hot-holding at the time of the inspection.
All coolers had accurate thermometers.

Sanitation
All handsinks were adequately equipped with hot/cold running water, liquid soap, and disposable paper towels.
Low-temperature dishwasher achieved 100ppm chlorine residual at the dish surface after the final rinse cycle.
NOTE: be sure to check the sanitize concentration with the test strips frequently to ensure proper sanitation.
Sanitizer pail had 200ppm chlorine solution.
All handles and seals of all coolers were in good sanitary condition.
Ventilation canopy was in good sanitary condition. It is due for servicing next month (30th September, 2020).
Washroom was in good sanitary condition.
Test strips for sanitizers were available and in use.

Storage
Food was stored at least 6" off the floor.
Raw meats were stored on the bottom shelves and ready-to-eat foods on top shelves.
All food items were covered with lids or plastic wraps.
Randomly selected food items in storage were within their best before dates.
Cooked food cooled properly in shallow trays (cheesy-potatoes) and kept in cooling rack inside walk-in cooler.

Pest control
No signs of recent pest activity were noted. Tin cats were empty.
Facility is monitored by a professional pest control company on a monthly basis.

Administration
Operator is FoodSafe level 1 certified. Valid until March 4, 2025.
Permit is posted. Pest control reports available on site.

COVID Safety
Staff is required to wear masks.
Signs for social distancing are posted. Tables are 2m apart.
