- Routine inspection conducted. - Hand washing sink was properly supplied with hot and cold running water, liquid soap, and paper towels. - High-temperature dishwasher reached 72C at the dish surface during rinse cycle - good, minimum of 71C required. - Quats sanitizer solution available at 200 ppm in spray bottle. - Cooler measured at 1C. Freezer temperature satisfactory. - Accurate thermometers available. Chef maintains daily temperature records. - Food storage practices satisfactory. All food stored properly covered and off the floor. - Dry storage areas also satisfactory. - General sanitation is excellent. - No signs of pest activity noted. - Chef has valid FoodSafe level 1 certification. *Note: Discussed changes to daily operations/increase in food volume with operator at time of inspection. In addition to food preparation for this location, this kitchen will be preparing and delivering snacks and meals each day (at each snack/meal service time) to the new Sullivan location, for immediate service (no hot or cold storage of snacks and meals at new location). Food will be properly packaged for transport. Dishwashing to occur at new location, with clean dishes being returned to this location.
