Observation (CORRECTED DURING INSPECTION): Operator stated the chicken donair cone is sliced when ready, meat is collected in a container and stored at room temperature. Chicken is reheated in oven when order is to be served. Any left over is stored in cooler and reheated in oven the next day and stored in hot holding unit
Corrective Action(s): Discarded the batch of meat that was left at room temperature.
Operator is not doing any secondary cook step for donair meat. All meat/chicken that is sliced form the cone must undergo secondary cook step immediatley to ensure that it is cooled to internal temperature of 74C in the oven. Once cooked, the meat can be cooled properly and stored in cooler at less than 4C or hot holding unit at greater than 60C. Cooling must ne done from 60C to 20 C within two hours and from 20C to 4c within 4 hours in cooler

Comments

Routine inspection conducted and following are observed:
- Handwashing stations are supplied with hot and cold running water, liquid soap and paper towel
- All coolers - two prep coolers, drinks cooler and walk-in cooler are measured at less than 4C
- Hot holding unit for pizza and rice is measured at greater than 60C
- Freezer is less than -18C
- Sanitizer solution is available and measured at 100ppm chlorine residual
- Foodsafe level 1 is verified
- NO evidence of pest activity is noted at the time of inspection
- General sanitation is satisfactory
