Handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels.
Handwashing practices were satisfactory.
Walk-in-cooler (in storage room 706) and other coolers within the facility were at or below 4 degrees C.
Walk-in-freezer (in storage room 706) was at or below -18 degrees C.
Upright freezer temperature was satisfactory.
Raw chicken inside covered containers was stored separately from ready-to-eat food inside the refrigeration units.
Hot-held food (e.g. chicken, gravy) were at or above 60 degrees C.
4 hour time-stamps were in place for condiments in the upper component of the prep. cooler.
Condiments in the inserts of the prep. cooler were also stored on ice.
Temperature records were being maintained electronically.
Ventilation hoods were in a clean condition.
Pest control program was in place on a weekly basis through the mall (every Wednesday).
200 ppm QUATS sanitizer was available inside the third compartment sink unit and sanitizer pails.
3-compartment sink was supplied with hot and cold running water.
