Observation (CORRECTED DURING INSPECTION): No food grade sanitizer solution was available at the time of inspection. Staff stated that bleach bottle is not kept in kitchen area as volunteers can not read the labels and may misuse it. 200ppm bleach solution was prepared in spray bottles during inspection.
Corrective Action(s): Please designate one staff to prepare sanitizer solution every day. Ensure that an approved food grade sanitizer solution is available during facility operation.
For 100-200ppm bleach solution, add 1 teaspoon bleach in 1 Litre of water.

Observation: Rodent droppings were observed on the floor and along the walls in the back room used for storing clean utensils. Rodents carry diseases and can contaminate clean food contact surfaces with urine, faeces and saliva which may result in potential food contamination.
Corrective Action(s): Please remove the rodent droppings and disinfect the area with 1 part bleach to 9 part water solution. Use proper PPE during cleaning.
Contact your pest control company and notify them about the problematic area.

Observation: 1. In the back storage room, there is a significant gap under the door which can be a potential entry point for rodents.
2. In the dry storage room, food debris was observed between dispensing units that could attract rodents.
Corrective Action(s): Please seal the gap under the door and clean the dry storage room.

Comments

Routine inspection conducted. Improvement noted in food storage practices and overall maintenance of facility.

- Temperature of walk in cooler noted at 1C
- Walk in freezer at -18C
- Cooler recorded at 3C
- Hot holding units noted above 60C.
- Handwash sink available and had adequate supply of hot and cold running water, liquid soap and air dryer (single use paper towel recommended in food prep and processing area).
- High temp mechanical dishwasher reached 73C on plate level.
- 3 compartment dishwashing sink present.
- Food products were properly covered and stored at least 6 inches off the floor. Good.
- Dry storage room has dispensing units for bulk storage.
- Walk in cooler and freezer was properly organized.
- All equipment and the facility was maintained in good sanitary condition. Good.
- Mechanical traps were present throughout the facility.

NOTE - During inspection, a few potentially hazardous food were stored at room temperature in large cooking pots. The temperature of food was noted between 55C to 85C. Staff stated that food is cooked 3 times a day and served within 4 hours. Education provided and reminded not to exceed more than 4 hours at room temperature and left over to be discarded. Second option is to hot hold potentially hazardous food at a temperature of atleast 60C or above.
