High temperature dishwasher has been installed. Washer was on at start of inspection, but hadn't run in a few hours. Over the course of 20min and 5 cycles, maximum temperature reached was 69C internally at plate surface. The temperature at the plate surface must reach a minimum of 71C (180F on the dial) after initial warm up
***A max/min, waterproof thermometer is needed to be able to measure sanitizing temperatures. This must be recorded on your daily temperature logs
Dish washing staff arrived on site at time of inspection and was instructed to manually sanitize after the mechanical wash
Hot holding unit at front has been repaired and products were measured at 62C. Good
Standing cooler is not currently in use, but requires fixing. Current temperature 11C
