Observation (CORRECTED DURING INSPECTION): Sanitizer required to be prepared during time of inspection.
Employee onsite informed that lysol wipes are being used in addition to bleach water sanitizer during this inspection.
Corrective Action(s): The following must be completed:
1. Lysol wipes are not to be used for any food contact surfaces. Bleach water was prepared during inspection and found to be at 100ppm concentration.
2. Ensure to use bleach water sanitizer at all times for food contact surfaces. Also ensure to store all rags in sanitizer at all times. Do no leave rags on counters. Remove all rags immediately and keep rags in sanitizer buckets.
3. Ensure there is a sanitizer bucket at each work station.

Observation: Upright freezer requires thorough cleaning and defrosting.
Corrective Action(s): De-ice and clean upright freezer as needed. This is to be completed within a week.

Observation: Preparation table (west of the under the counter cooler) has crooked bottom shelf. This needs to be repaired.
Corrective Action(s): Fix preparation table to ensure shelf is of suitable design and there is no safety risk.

Comments

Routine inspection.
All handwashing stations are equipped with hot/cold running water, liquid soap and paper towels.
Washroom handsink is fully equipped with hot/cold running water, liquid soap and paper towels.
Upright cooler with 4 doors is at 3c and equipped with thermometer.
Under the counter cooler at 4c.
Front display cooler in customer area at 4c.
Coolers are equipped with thermometers. .
Upright freezer at -23c.
Dishwasher at 82c at manifold and 71c at dish level.
All foods are located off the floor.
Overall sanitation is adequate.
Reminder: Ensure to clean and sanitize all hard to reach areas including shelves, cooling racks, under the counter areas and behind large equipment.
Pest control is in place.
No issues noted during time of inspection.
Employees observed to be wearing uniforms and have hair tied back.
Reminder: Ensure all employees refrain from wiping hands on clothing/aprons during all food service.
Foodsafe certified employee available onsite in operators absence.
