Comments

All coolers were on a defrost cycle at the time of the inspection due to regular maintenance. However, they went down to 4 C at the end of the inspection.
All freezers were < -18 C.
Hobart dishwasher in the back had a final rinse temperature of 73 C at the plate level. It is used for washing scoops in the bulk department and for washing wine glasses. A separate company does wine sampling occasionally (not on site at the time of the inspection).
No evidence of pests at the time of the inspection. Traps in place in the back of the store.
General sanitation was satisfactory.
