Observation (CORRECTED DURING INSPECTION):
Low temperature dishwasher sanitizing with 0 ppm chlorine. It was observed that the sanitizer bottle under the machine was empty. Some chlorine sanitizer was added to the bottle under the machine at the time of inspection and the dishwasher was now sanitizing dishes with 50 ppm chlorine. Operator informed that a new full bottle will be brought in today.
Corrective Action(s):
Ensure there is an extra sanitizer bottle for the dishwasher available in the facility, or check regularly to determine when a new bottle will need to be purchased. Put all the dishes through the dishwasher again to ensure the dishes have been properly washed, rinsed and sanitized.

Baffles of ventilation canopy have accumulation of grease and debris.

Clean baffles of ventilation canopy. Ensure to clean the baffles on a regular basis.

Routine Inspection:

Kitchen:
Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
Concentration of bleach sanitizer in spray bottle and in bucket = 200 ppm.
The following temperatures met health requirements:
- Coolers (walk-in, prep, sliding glass door) maintained at or below 4 degrees Celsius.
- Freezers (3 chest) maintained below -18 degrees Celsius.

Front:
Hand washing station fully equipped with liquid soap, paper towels and hot/cold running water.
Concentration of bleach sanitizer in spray bottle = 200 ppm.
Temperature of display and beverages coolers maintained at or below 4 degrees Celsius.
Temperature of Kulfi freezer maintained below -18 degrees Celsius.

Overall:
No signs of pest activity at the time of inspection.
Permit to Operate posted.
