General sanitation is satisfactory. Some extra attention is needed in hard to reach areas (ie. under and behind large equipment). Handwashing station now present in cake decorating area Liquid soap and paper towel present at both handsinks. Cake display cooler at 3C Cake prep cooler at 2C Walk-in cooler at 0C Walk-in freezer at -22C Quats sanitizer (200ppm) available from dispenser at 2 compartment sink (in cake decorating area), at 3 compartment sink and in spray bottles. Final rinse of high temperature dishwasher was 71C as per thermolabel No signs of pest activity in this area.
