Observation (CORRECTED DURING INSPECTION): 1) The back kitchen handwashing sink had no paper towel in the dispenser. Staff are unable to dry their hands properly
2) The staff washroom had no paper towel in the dispenser. Staff are unable to dry their hands properly.
3) The handwashing sink, in the back by the cake freezers, had no paper towel in the dispenser. Staff are unable to dry their hands properly.
3) The handwashing sink, in the drive-thru area, was blocked with ice cream cones and there was no liquid soap or paper towel at it. Staff are not able/encouraged to wash hands after handling money and before touching food, as they must walk to the back kitchen to do this.
4) There was no designated handwashing sink in the front service counter area, yet there are two sinks available. Staff are not encouraged to wash hands after handling money and before touching food, as they must walk to the back kitchen to do this.
Corrective Action(s): 1) Immediately place/refill the empty paper towel dispensers at the sink in the back kitchen, in the staff washroom, and by the back cake freezers. During the inspection, paper towels were placed in the empty dispensers.
2) Immediately remove the ice cream cones that are blocking the handwashing sink in the drive-thru area. Place a dispenser of liquid soap and paper towels at the sink so staff can wash their hands properly.

Comments

A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezers -25C; hot holding units above 60C; thermometers present; and temperatures monitored daily.
- 3-comp dishwashing sink had Quats sanitizer at 200ppm.
- Cloth buckets had Quats sanitizer at 200ppm.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups; and foods stored 6" off the floor on shelves, racks, or pallets.
- No expired foods in use or for sale. FIFO rules being followed.
- FoodSafe certified staff present. The owner and one other staff member possesses FoodSafe Level 2 certificate.
- General sanitation level is good. The exhaust canopy was professionally cleaned in March 2022 and next service due in October 2022. The exhaust filters are washed and sanitized at least once a week by staff.
- Found some debris and food on the floor, along the base of walls under equipment (coolers, freezers, fryers) and shelves. The owner explained that every month, a contracted cleaning company, completes a deep clean of the premises. Equipment is moved away from walls (especially in the frying area) and the walls and floors are cleaned beneath and behind the equipment. Increase the frequency or ensure staff are reaching and cleaning these areas every day to remove food and debris, to prevent attracting pests.
- No signs of pests. Pest monitoring is in place, a company is contracted on a monthly basis.

**A follow-up inspection will be completed on May 9/22 to ensure all concerns have been corrected.**
