Observation (CORRECTED DURING INSPECTION): At the time of inspection internal food product temperature of pizzas stored on lowest shelf of hot holding case at 35-40 degrees C.
Corrective Action(s): Discarded pizzas. Ensure all hot potentially hazardous foods are displayed at or above 60 degrees C. Staff reheated from frozen new pizza and now stored at or above 60 degrees C in the hot holding case.

Observation (CORRECTED DURING INSPECTION): At the time of inspection quats concentration in spray bottle for cooking area and front service area observed to be 50-100ppm.
Corrective Action(s): Ensure a 200ppm quats sanitizer solution is available for sanitizing food contact surfaces.

Corrective Action(s): Service the hot holding case and ensure it is capable of maintaining 60 degrees C or above at all times. Correct by April 6, 2022.
