Observation (CORRECTED DURING INSPECTION): [REPEAT VIOLATION] Potato fry cutter observed stored with food debris in the dry storage area.
Corrective Action(s): Dissassemble, clean and sanitize the potato cutter to remove all food debris and potential bacteria. Ensure all equipment is cleaned and sanitized after each use to prevent potential contamination to food and to maintain the premise in a sanitary manner.

Observation (CORRECTED DURING INSPECTION): Lettuse in preparation cooler in the line observed covered with re-usable cloth. Re-usable cloth was removed from the lettuse during inspection.
Corrective Action(s): Do not use re-usable cloths to cover any food as it can potentially contaminate food. Use food grade materials to cover all foods (i.e. plastic wrap, parchment paper or plastic/stainless steel containers).

- 2-door glass cooler at 3'C
- All freezers at or below -19'C
- Hot-holding units at or above 60'C
- Temperature logs are maintained - good!
- General sanitation is satisfactory during inspection
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid soap and paper towel
*NOTE: second hand washing station in service area has been repaired
- QUATs sanitizer in spray bottles (X3) measured at 200 ppm QUATs concentration
- High-temperature dishwasher measured at 72'C at plate surface
- Ice machine is observed in sanitary condition
- Chemicals are stored away from food
- All food observed stored covered and at least 6 inches off the floor
- Raw meat is stored away from ready-to-eat foods
- No signs of pests during inspection
- Public washrooms observed in sanitary condition
- Permit posted in a conspicuous location on site
