Observation (CORRECTED DURING INSPECTION): 1. Observed used knives and pizza plates on prep table that had been used but not cleaned or sanitized. Discussed with operator that during down times, operator must clean and sanitize all utensils and food contact surfaces.
2. Observed dough mixer not cleaned and sanitized after use
Corrective Action(s): Required operator to clean and sanitize the area and the dough mixer; operator began to clean and sanitize at the time of inspection.
