Observation (CORRECTED DURING INSPECTION): Several inserts of cold potentially hazardous foods stored beside hot holding unit on the table at 13-20C:
Mint sauce, oil with cilantro, chopped fine garlic, yogurt, sliced and diced vegetables, samosas, vegetable pakora. Staff states it has been stored 1 hour on the tables, but no verification methods could be produced.
Corrective Action(s): Do not store cold potentially hazardous foods between 4C and 60C. Discard cold potentially hazardous foods stored for more than 2 hours between 4C and 60C.
