302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 100 ppm chlorine sanitizer was measured in a sanitizer pail that also had soapy water present in it.
Corrective Action(s): It was discussed that food contact surfaces should be first cleaned with hot soapy water to remove any organic residues, then rinsed to remove the soap, and then subsequently sanitized prior to air drying step to enable the chlorine sanitizer to work effectively without potential interference from the detergent. Operator setup 100 ppm chlorine sanitizer separately during the inspection. Cutting board that had been used during the inspection was observed to be subsequently properly washed, rinsed, sanitized, and air dried during the inspection.

Observation: Preparation utensils (bowls and stainless steel metal inserts) were observed stored on the floor below the 3-compartment sink next to bleach bottles and in the floor corner next to the shelving unit. This is a repeat violation.
Corrective Action(s): Preparation utensils/food contact surfaces should be stored at least 6 inches off the floor, stored separately from the chemical storage area, and away from sources of potential contamination to protect food from any potential or incidental contamination. Correct today.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Ventilation hood panels require cleaning to remove the accumulated grease build-up. Operator informed that the ventilation is due for a professional cleaning on October 5, 2022.
Corrective Action(s): Ensure the ventilation hood panels are cleaned to remove the accumulating grease build-up and to maintain in a clean condition; Correct by October 5, 2022.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Domestic white fridge was at 5.3 to 9.2 degrees C at the time of inspection. Operator informed the thermostat for it was changed recently today.
Corrective Action(s): Ensure the domestic cooler is kept empty of cold potentially hazardous food until it can maintain a safe food temperature at or below 4 degrees C. Ensure the fridge is able to maintain a temperature at or below 4 degrees C. Operator transferred cold potentially hazardous food from this fridge to another fridge at or below 4 degrees C.

Observation: Thermometers were not available inside both domestic fridges.
Corrective Action(s): Ensure the domestic fridges are equipped with accurate thermometers to monitor refrigeration temperatures are maintained at or below 4 degrees C. Correct within 2 days.

Liquid soap and single-use paper towels were available at the 3-compartment sink.
3-compartment sink was supplied with hot and cold running water and it was equipped with drain plugs.
Manual wash, rinse, sanitize, and air dry method was reviewed with the Operator.
Other refrigeration units were at or below 4 degrees C.
Freezers were at or below -18 degrees C.
No signs of recent pest activity were evident at the time of inspection.
Operator had valid FOODSAFE Level 1 refresher course training (expiration date: July 15, 2023).
