Observation (CORRECTED DURING INSPECTION): - Gravy was noted in the cooler which was 40C.
- Trays of food were noted cooling stacked on top of eachother at room temperature
Corrective Action(s): - Follow food safe cooling practices. Cool foods rapidly by portioning into smaller containers and stirring. Monitor cooling process to ensure food cools from 60C to 20C within 2 hrs max (prior to transferring to cooler) and then from 20C to 4C within 4 hrs max.

Observation (CORRECTED DURING INSPECTION): - 0ppm chlorine detected on dish after dishwasher cycle. Premises had closed for the day.
Corrective Action(s): - After operator changed bucket of chlorine sanitizer at time of the inspection, 50ppm chlorine was detected on the dish which is adequate to sanitize.
- Operator has test strips. Ensure chlorine residual is tested daily prior to operation.

Observation (CORRECTED DURING INSPECTION): - Bread was being stored in garbage bags
- Containers of lentils stored in freezer without a lids and plastic container was damaged with pieces of plastic breaking off
- Containers being used as scoops in dry goods bin
Corrective Action(s): - Use foodgrade containers/materials for storing food. Garbage bags are not acceptable. Bread was transferred to foodgrade containers at time of the inspection.
- Ensure food containers are in good condition. Damaged container with lentils was discarded at time of the inspection.
- Use scoops with handles for dry goods. Ensure handle does not come into contact with food. Containers were removed at time of the inspection
