Observation (CORRECTED DURING INSPECTION): Both sanitizer spray bottles were not labelled properly to identify the contents.

Comments

Both handsinks in the kitchen & front service area and three handsinks in the washrooms were supplied with liquid soap, hot and cold running water, and paper towels.
Wall-mounted liquid soap and paper towel dispensers were available at the handsink near the front service area.

Dishwasher final rinse chlorine sanitizer was at 100 ppm (required: minimal 50 ppm).
2-compartment sink was operational.
Chlorine test strips were available on-site.
100 ppm chlorine sanitizer was available inside two spray bottles.
Cleaning supplies and chemicals were stored separately from food storage.

Both upright coolers and small cooler were at or below 4 degrees C and were equipped with thermometers.
Under-the-counter cooler was plugged in however was not being used for food storage. It was at or below 4 degrees C. Operator mentioned that they are not using it for food storage yet. Make sure it is equipped with an accurate thermometer if it is to be used for food storage in the future.
Walk-in-freezer was at or below -18 degrees C and was equipped with a thermometer.
Hot-held food (gravy and pea sauce) was at or above 60 degrees C.

Ice machine was in a clean condition and scoop was stored separately in a clean container.
Base-boards and floor was in a clean condition throughout the facility.
Light cover was installed where it was previously missing over the light bulb above the cook line.
Previously rusted shelving unit was removed and it was replaced with a new easy to clean shelving unit.

NOTE: Please install a shelving unit (made of easy to clean, durable, impermeable to moisture, and smooth materials) in the walk-in-freezer to raise the products at least 6 inches off the floor. This will also allow good air circulation around the products and enable easier cleaning of the floor below the packaged products. Food products in the walk-in-freezer were covered in their original boxes/packaging at the time of inspection.
