Comments

Coolers are at 4 C or colder with the exception of the small bar cooler used to store fresh cut fries. Store fries in this cooler for 2 hours maximum only.
Hot holding (gravy and au jus) is at 60C+ - good,
Hand washing stations have liquid soap and paper towels.
Food Safe - certificates are <5 years and are valid.
Dishwasher has a final chlorine sanitizing rinse.
Quats sanitizer and chlorine sanitizer in labeled spray bottles - good.
Sanitize knives, cutting boards etc. every 2 -4 hours.
Kitchen has good lighting and is well-organized.
Pest control program is in place. No evidence of pests during inspection - good.
