- Freezer at -15C
- Ice maker in sanitary condition.
- Chlorine sanitizer in spray bottle measured at 200ppm.
- 3 compartment sink being used for manual dishwashing. 3rd sink filled with 100pm chlorine sanitizer.
- No signs of pest observed at the time of inspection.
- Cooked pearls and taro balls are being discarded every 2 hours after being made. Ensure to keep a time tracking record on the container.
