Observation: Portion spoons/scoops (near a hot holding unit) stored in water with food debris at room temperature at the time of inspection.
Corrective Action(s): Ensure that spoons/scoops are stored in ice-bath; and as soon as ice melted it must be replaced.

Observation: A cleaning agent stored near clean utensils/prep. area.
A spray water for the grill wasn't labeled and stored with cleaning agents.
Corrective Action(s): All cleaning agent/chemicals must be stored safely (away from food and clean utensils/dishes as well as properly labeled).

Walk-in cooler at 2.0 C.

Dishwasher at 100 ppm of Chlorine solution.
Food items stored in plastic insert containers with lids, dated, and labeled.

Dry storage area - organized.
All food stored safely at the time of inspection.
Fan hood - satisfactory.
No signs of pest activity at the time of the inspection. Pest control system in place.

Recommendation:
- Ensure surface sanitizer in color coded buckets available neat work station (Quat at 200 ppm). Test strips for sanitizers have to be available.

Note: Under grill cooler turned off (the cooler is empty/not in use). Parts for the cooler are unavailable. An operator is planning to purchase a new cooler. (The issue with the cooler is remain from previous reports.)
