Observation (CORRECTED DURING INSPECTION): Two sanitizer bottles measure 50ppm of QUATs
solution.
Corrective Action(s): Replace the old solution with fresh QUATs
solution measuring 200ppm to effectively
sanitizer food contact surfaces. Manually made QUATs
solution achieving 200ppm at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Rodent droppings observed in the following areas :
- underneath the office desk
- underneath the shelvings near the back door
- inside the mop sink room

Corrective Action(s): Remove droppings, Apply bleach solution to remove
the scent. (1 tsp bleach + 1 litre of water )

Observation: QUATs sanitizer dispenser was not dispensing
QUATs solution with adequate concentration (50ppm)

2-door upright cooler in the kitchen and the
prep-cooler (R) in the front were not in use
because they were broken.
Corrective Action(s): Fix the QUATs sanitizer dispenser to properly
dispense QUATs solution achieving 200ppm.
Fix the broken coolers to achieve 4°C or below.
Until QUATs sanitizer dispenser gets repaired, ensure
200ppm QUATs solution gets manually made and test the solution every day

are stored protected from contamination
- Shatter proof light covers are in place with adequate lightings
- Operator's FoodSafe Level 1 verified during inspection
( valid until May 29th, 2028)
- Permit posted in conspicuous location

(Temperatures)
Kitchen :
- under counter cooler = 4°C
- single door upright cooler = 4°C
- single door freezer = -1°C ( food in frozen state )
- 2 - door upright freezer = -18°C
Front :
- Prep cooler (on left) = under counter : 4°C
- Large bev cooler = 2°C
- Hot holding unit (soups) = 76°C and 71°C
- Hot holding unit ( Shredded meat) = 62°C

Note:
- At the time of inspection, the main cooling cooler
(2-door upright cooler) was broken. Until this cooler
gets repaired, ensure to monitor the internal temperatures
of the cooling meats with a proper stem thermometer.

* Reminder :
- Cooling needs to occur in the following procedure :
60°C to 20°C in 2 hours, 20°C to 4°C in 4 hours.

coolers
