Observation (CORRECTED DURING INSPECTION): Repeat Violation:

Soiled wiping rags in use without sanitizer in front preparation area.

Wiping rags stored in container of 0 ppm Quaternay Ammonia in dishwashing area.

Sanitizer compartment of 3 compartment sink 400 ppm Quaternary Ammonia.

Both staff onsite not knowledgable how to prepare sanitizer at 200 ppm Quaternary Ammonia and how to use test strips to verify sanitizer concentration.
Corrective Action(s): All wiping cloth rags in use are to be stored in a container of sanitizer solution (200 ppm Quaternary Ammonia, to be verified by test strip).

Sanitizer compartment is to be filled with 200 ppm Quaternary Ammonia, verified with test strip.

Observation (CORRECTED DURING INSPECTION): Repeat Violation:
Staff observed performing multiple tasks, preparing food items and conducting cash transactions without washing their hands.
Corrective Action(s): Food handlers are to thoroughly wash their hands before commencing work. In particular, food handlers shall wash their hands each time after using the washroom, when returning from a break, after eating, after handling raw food products, or after any other activity where hands may become soiled (handling money, garbage, touching hair/eyes/mouth/nose etc.)

Observation: Front entrance of premise allows for unobstructed access of pests into food preparation areas.
Corrective Action(s): Pest proofing measures are to be employed to prevent entrance of pests. Physical barriers to be used must ensure any that no gaps are larger than 1 cm to effectively pest proof kitchen area.

Glue boards can be deployed in series along the floor during closing to discourage pest movement into kitchen area.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Mouse droppings on floor inside janitorial closet around both sides of mop sink.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: Both staff onsite do not have Foodsafe training.
