Observation (CORRECTED DURING INSPECTION): Raw fish and raw chicken stored above avocados. Ensure all potentially hazardous food are being stored at the bottom of the shelf, above ready to eat food. Operator to dedicate one shelf for all raw meats such as chicken and fish in the walk in cooler. Operator reorganized the walk in cooler to store raw meats on one shelving unit

Observation: Back door when closed has a gap which pests can potentially enter.

Observation (CORRECTED DURING INSPECTION): Cardboard being used as liner underneath the prep tables. Remove all cardboard from the facility and do no use any cardboard in the facility. Operator removed the cardboard from underneath the prep table.

Observation: Cutting boards are worn out and filled with scratch marks.
Corrective Action(s): Replace the cutting boards. send the picture of the new cutting board to the area inspector.

Note: Currently only one employee has food safe certificate. Facility operates 7 days a week. At least 3 staff should have food safe certificate to ensure at least 1 staff member has foodsafe training when operating. All owner/operator of the facility must have foodsafe training. Ensure all owners/operator of the facility has foodsafe training. Register for foodsafe training course by oct. 18, 2022 and send a copy to the area inspector via email.
