Observation (CORRECTED DURING INSPECTION): 1. A paper bag of dry food product was observed to be stored directly on the floor.
2. Waffle cone molds were observed to be stored in contact with fabric gloves that had dried-on food debris.
Corrective Action(s): 1. Bag was removed from the floor. Ensure all food is stored off the ground to protect from potential contamination and to facilitate proper cleaning.
2. Waffle cone molds were placed into dishwashing area to be washed and sanitized. Ensure molds are stored in a manner that protects from potential contamination (e.g. in a clean dry container away from potential sources of contamination). Ensure gloves are properly washed. Store clean gloves separately from soiled gloves.

Observation: Food debris, spills, and/or grease observed in the following areas:
1. Back area freezers (interior surfaces)
2. Back area cooler (interior surfaces, particularly bottom interior)
3. Door seals of front under counter cooler and left side cooler exterior
4. Waffle irons (particularly exterior grease-laden areas)
Corrective Action(s): Ensure that the above-noted areas are properly cleaned. Food debris, spills, and/or grease may potentially contaminate exposed food and may potentially attract pest activity. Date to be corrected by: June 17, 2019.

Observation (CORRECTED DURING INSPECTION): Used single use clear plastic piping bags were observed to be hanging in clean utensil storage area at three compartment sink.
Corrective Action(s): Above noted items discarded. Ensure that single use piping bags are used once only, then discarded. They are not intended for reuse and are not designed to be washed and sanitized.

- Dipper well functional
- Bleach water sanitizer prepared at 100 to 200 ppm chlorine at three-compartment sink during the inspection. Note: Ensure bleach water sanitizer (100 to 200 ppm chlorine) is prepared at beginning of day and changed throughout the day as needed. Hot/cold running water and liquid detergent are available for manual ware washing.
