Observation (CORRECTED DURING INSPECTION): Bar station and front of the house sanitizer buckets tested for 0 ppm quat sanitizer. Sanitizer dispenser is out of order and manual mixing of sanitizer is in use.
Corrective Action(s): 200 to 400 ppm Quat sanitizer is required for all sanitizer stations. Test the concentration of sanitizer and log daily when solution is tested. This is a repeat infraction. Staff created new sanitizer solution at 400 ppm Quat at the time of solution.
Note: keep 200 to 400 ppm Quat sanitizer to ensure proper sanitization to prevent disease and solution too strong above 400 ppm is toxic for human contact. Correction required today.

Observation (CORRECTED DURING INSPECTION): Dirty cutting knives were stored in the hand washing behind deep frying station.
Corrective Action(s): Do not store knives or anything items in dedicated hand washing sink. Wash and sanitize knives in dish washer. Keep hand sinks clear for hand washing only.

Observation (CORRECTED DURING INSPECTION): Bags of lettuce observed stored directly on the floor of walk in cooler. Do not store food directly on floor as it is contaminated.
Corrective Action(s): Always store food on dedicated shelving at least 15 cm off the floor. Wash and sanitize bags of lettuce and discard any contaminated food.

Premise is sanitary. No pests observed at the time of inspection.
Hot and cold water available.
Dedicated hand sinks with liquid soap and paper towels available.
Staff demonstrate good personal hygiene and sanitary hand washing.
Washrooms are sanitary with fully stocked hand sinks.
Ice machines are sanitary with dedicated hand scoop.
Main kitchen condiments in use suspended in ice and/or time stamp and discarded after service shift.
Dedicated thongs for raw proteins to prevent cross contamination.
Temperature holding is adequate and in use with accurate thermometers.
Coolers are at 4C and below, freezers are at -18C and below.
Hot holding at 60C and above.
Quat sanitizer at 400 ppm after correction.
Dishwasher final rinse at 100 ppm chlorine at the plate. Glass washers in use at 12.5 ppm to 25 ppm iodine at the plate.
Note: second floor glass washer not in use and iodine sanitizer bucket is empty.
Ensure this unit is operational before opening this food station.

Mop sink back flow preventer in place.

Recommend replacing old plastic cutting boards with wear and tear in near future.
