Observation (CORRECTED DURING INSPECTION): Handsink near the front service area lacked liquid soap and paper towels.
Corrective Action(s): Staff re-stocked the above-noted handsink with liquid soap and paper towels. Ensure to all handsinks are kept supplied with liquid soap, hot and cold running water, and single-use paper towels to enable proper handwashing practices.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): 1. Onions were observed being sliced in the front service area, without a sneeze-guard/food-guard barrier between the front counter and customer service area.

2. One open bag of dry food ingredients was not stored in a sealed pest-proof container between use.
Corrective Action(s): 1. Ensure food preparation is conducted either in the back designated preparation area, or install a sneeze-guard barrier at the front counter to protect the food ingredients from any potential contamination. Manager informed that staff are supposed to be slicing the onions in the back designated preparation area, and he would review this with them.

2. Manager cleaned and sanitized a dry storage container to transfer the bag of dry goods into it later today.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Hole was observed in the wall near the entrance door of the food service establishment.
Corrective Action(s): Seal the above-noted hole in the wall to prevent potential pest entry points; Correct within 2 weeks.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Under-the-counter cooler containing sliced onions and salsas for nachos was above 4 degrees C (measured at 7.5 to 8 degrees C).

2. Under-the-counter cooler containing creamers was above 4 degrees C (measured at 11 degrees C).
Corrective Action(s): 1. Ensure cold potentially hazardous food is stored at 4 degrees C or less or time-tracked (via written time-tracking logs) up to 4 hours maximum prior to discarding it; Correct immediately. Staff transferred the sliced onions and salsas into the walk-in-cooler during the inspection.

Adjust or re-service the under-the-counter cooler so that it is maintained at 4 degrees C or less; Correct by January 26, 2024.

2. Manager informed creamers are not used and discarded them. Manager informed this under-the-counter cooler is not used for storage of food. If this under-the-counter cooler is to be used in the future, ensure it is monitored and maintained at 4 degrees C or less prior to stocking it with cold potentially hazardous food.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation (CORRECTED DURING INSPECTION): Under-the-counter cooler containing the cold condiments for nachos lacked a thermometer.
Corrective Action(s): Ensure the above-noted cooler is equipped with an accurate thermometer to monitor its' refrigeration temperature at least every 2 hours throughout operation. Manager transferred the thermometer from the second under-the-counter cooler (that is not in use) into this under-the-counter cooler during the inspection.

Comments

Other handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels.
Walk-in-cooler, upright double-door cooler, and beverage coolers in use were at 4 degrees C or less.
Walk-in-freezer was at -18 degrees C or less (measured at -20 degrees C).
Other freezer temperatures were satisfactory.
Hot-held food was at least 60 degrees C.
One of the hot-holding cases was empty of food, and it was preheated to at least 60 degrees C.
200 ppm Quaternary ammonium compounds (QUATS) sanitizer was available in the spray bottles, and from both dispensers of the ware-washing sinks.
Both 3-compartment ware-washing sinks were supplied with hot and cold running water. Sink plugs were available.
Pest control program was in place via Abell on a minimal monthly basis, and more often if needed.
Most recent pest control service was conducted on January 15, 2024 based on the Abell pest control report.
Manager on duty held valid FOODSAFE Level 1 equivalent course training certificate (FoodSafetyTraining.ca -Food Handler Certification program, expiration date: November 30, 2026).
Permit to operate was posted.
