Follow up inspection:
-Food storage areas were organized inside the walk-in-cooler. Raw meat was stored on a designated and separate shelving unit than ready-to-eat food inside the walk-in-cooler.
-100 ppm chlorine sanitizer was available inside three labelled sanitizer pails. Chlorine test strips were available on-site.
-QUATS sanitizer spray bottles were properly labelled.
-Thermometers were available inside the upper sushi bar cooler and under-the-counter cooler across from the cook line. It was reviewed to regularly check refrigeration temperatures to ensure that cold potentially hazardous food is stored at or below 4 degrees C.
