Observation: Rodent droppings observed on the floor around pest control station 32.
Corrective Action(s): Remove rodent droppings. Sanitize this area.
Check for droppings daily and remove and clean area immediately.
All surfaces should be sanitized prior to use.

Observation: Space between 4 door cooler and dough proofer is dirty with old food debris and pooling water.
Corrective Action(s): Clean and sanitize this area as soon as possible. Recommend closing the gap between these two pieces of equipment.
All spaces between equipment should be cleaned routinely to prevent food and water from accumulating. This area can also become a pest harborage/breeding site.

Cake cooler in retail area at 4 C or below.
Freezer in retail area varied between -12 C to -18 C.

Hand washing sinks in packaging area equipped with hot/cold running water, liquid soap and single use towels.
Note: Hand washing sink in baker's area requires paper towel. This sink was not in use at the time of inspection as bakers were off.

Quats at 200 ppm in spray bottle and from the dispenser.
Note: Quats at only 100 ppm in bakers area (not at use at the time of inspection) - replace with a fresh solution at 200 ppm prior to use.

Pest control services are in place.
