- Hot holding internal food temperature (miso soup) at greater than 60 degrees C.
- Hand sinks unobstructed and adequately supplied. Note: Front hand sink is draining slowly. Have drain cleared to allow for proper drainage.
- Food items covered and properly organized (raw, ready-to-eat).
- Areas noted on previous report have been cleaned. Note: Some cleaning still required on floor and walls at cook line--ensure this is completed by tomorrow.
- Wooden knife block and duct-taped knife not observed on site.
- Temperature records available.
Note: Glass door upright cooler is at less than 4 degrees C at time of inspection.
