Observation (CORRECTED DURING INSPECTION):
Observation #1: Bleach solution spray bottle on site, but concentration way too high - also not in-use by staff. Wiping cloth observed lying wet on countertop where vegetables being cut. Wiping cloths are required to soak in sanitizer solution when not being used. Mixed up a 100 ppm bleach solution (1/2 teaspoon bleach in 1 L of water) and placed wiping cloths inside. Bleach solution for wiping cloths must be changed every 2 hours. Food contact surfaces must be wiped down with bleach sanitizer frequently (e.g. at least every 4 hours and to prevent cross-contamination). Diluted the bleach solution spray bottle to 100 ppm. Spray bottle solution must be changed 1x a week.
Observation #2: Two dirty knives and one dirty peeler at clean magnetic knife rack. This is a repeat violation. Staff were made aware and washed and sanitized the dirty knives and peeler. Only clean utensils must be stored at the knife rack.
