Observation (CORRECTED DURING INSPECTION): Lentils soup cooked more than hour ago measures at 55C. Chef is unable to explain cooling procedure correctly
Corrective Action(s): - Ensure that hot food are cooled from 60C to 20C within two hours and from 20C to 4C within 4 hours inside cooler.
- Use ice wands, stir food occassionally, use shallow pans and portion out large quantities to help food cool faster

Observation (CORRECTED DURING INSPECTION): Food contact surface sanitizer is not available at the time of inspection.Staff member not aware of quats sanitizer that is available
- Quats sanitizer spray bottle measured at less than 50ppm quats solution. Solution was prepared few days ago.
-- Dirty knives are stored on the shelf and in prer cooler
- Ice machine has mold and mildew growth and ice scoop is stored in the machine
Corrective Action(s): - Fresh prepared solution of bleach measured at 200ppm chlorine residual
- Quats sanitizer was prepared according to manufacturer's direction and concentration was measured at 200ppm quats. Prepare fresh solution every day
- Get test strips from suppliers to check the concentration
- Store clean knives in a separate container or get knives rack or magnetic strip for storing properly
- Clean the ice machine. Store scoop outside

Observation (CORRECTED DURING INSPECTION): Dishwasher was not working at the start of the inspection. After several cycles temperature was measured at 62C during final rinse cycle at the dish surface
Corrective Action(s): Operator adjusted the dishwasher and after waiting further to allow it to heat up, temperature during final rinse reached 72C at dish level
- Check and maintain final rinse temperature and ensure that proper logs are maintained

Observation (CORRECTED DURING INSPECTION): Sanitizer bucket was left in handsink and it was not available for handwashing

- Store raw eggs on the bottom shelf, away from ready to eat food items
- Use scoops with handles and ensure that scoops are stored in a way that handles do not come in contact with food

Corrective Action(s): Remove all newspaper. You can use any lining material that is smooth, easy to clean and impervious to moisture
- Discarded the black garbage bag. Use food grade material such as plastic wrap to cover food
