- Refrigeration temperatures are ≤4o Celsius
- Freezer temperatures are satisfactory
- Chlorine food-contact surface sanitizer solution available at ≥100ppm concentration
- High-temp dishwasher is not operational at time of inspection. Operator indicates that a plumber has already been contacted to repair an issue with the sanitary lines connected to the dishwasher. Operator is manually warewashing reusable dishware, cups, and utensils in the 2-compartment sink until repairs completed.
*Ensure to use only unscented bleach for sanitizing food contact surfaces (including dishware, cups and utensils). Scented bleach contains additional chemical additives that may leave unsafe chemical residues on food contact surfaces.
