Observation (CORRECTED DURING INSPECTION): Facility dishwasher not achieving final sanitizing rinse of greater than or equal to 50ppm Chlorine. Concentrated Chlorine solution concentration too low. Concentrated chlorine solution so low it could not effectively be used to sanitize dishes manually at two compartment sink. CORRECTED DURING INSPECTION – owner had previously purchased QUAT solution for sanitizer solution spray. 20 squirts of QUAT concentrate used for ½ sink full of water. Dishes added to sink to soak for two minutes. Facility is take out only and no re-use of dishes occurring due to PHO Order regarding COVID-19 Pandemic.

Corrective Action(s): Ensure dishes are soaked for 2 minutes after each wash in QUAT solution until such time as Concentrated Chlorine solution is obtained for dishwasher. Health Inspector to return on Monday to test dishwasher.
