Observation (CORRECTED DURING INSPECTION): Dried on food debris observed on deli slicer.
Corrective Action(s): Deli slicer was cleaned and sanitized during inspection. Ensure equipment and utensils are cleaned and sanitized following each use, and are stored in sanitary condition to limit potential cross contamination.

Observation: Two-compartment sink in back of kitchen has no hot water.
Corrective Action(s): Ensure sink is supplied with both hot and cold running water under pressure. Date to be corrected by: July 25, 2022.
Note: Staff to use other hand washing stations that are properly equipped for hand washing in the interim. All hand washing stations must be accessible and supplied with hot and cold running water, liquid soap, and paper towels at all times to facilitate proper hand washing.

Observation (CORRECTED DURING INSPECTION): Milk crate containing uncovered bread to be used for bread crumbs was observed on counter near back door. Bread tag observed in container.
Corrective Action(s): Bread discarded. Ensure all food is properly covered and is protected from potential contamination at all times.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: 1. Screen door at back door was in use at time of inspection; however, large holes/gaps observed where screen mesh meets frame.
2. Food debris observed in several areas throughout the premises (e.g. bread crumbs on dry storage shelving).
3. Pooling water observed in few areas of kitchen.
4. Equipment (e.g. door off its hinges) stored near office.
Corrective Action(s): 1. Ensure screen door is repaired or replaced so that it is fully sealed in all areas (including bottom where frame meets threshold) so that it is effective in excluding pests when in use. In the interim, ensure back door remains properly closed at all times.
2. Ensure all food debris is removed and areas are propely cleaned and sanitized. Food debris may potentially attract pest activity. Date to be corrected by: July 23, 2022.
3. Ensure pooling water is properly mopped. Pooling water may potentially attract pest activity. Date to be corrected by: Today.
4. Remove noted equipment from the premises as this may provide potential harbourage areas for pests. Date to be corrected by: August 5, 2022.

Observation: 1. Debris observed in several areas throughout kitchen, dry storage, and bar.
2. In addition, rodent droppings observed in one area behind non-food equipment near office (no food or food-related equipment/utensils stored in this area). Droppings do not appear to be recent.
Corrective Action(s): 1. Ensure all areas of the kitchen, dry storage, and bar area properly cleaned and sanitized. Date to be corrected by: August 5, 2022.
2. Ensure above-noted droppings are properly cleaned, and affected area is sanitized. Date to be corrected by: Today.

Observation: 2-compartment sink in kitchen has no hot water.
Corrective Action(s): Ensure sink faucet is repaired or replaced so that both hot and cold running water under pressure are available for hand washing and sanitation. In the interim, staff are to use other hand washing stations that are properly supplied for hand washing. Date to be corrected by: July 25, 2022.

Bleach water sanitizer available in labeled spray bottles at 200 ppm chlorine.
Low temperature dishwasher measured 45 degrees C and 50 ppm chlorine in the rinse residual at the utensil surface (minimum: 50 ppm chlorine).
Ice machine and bin satisfactory. Scoop stored in clean container. Cleaning schedule is posted on wall (ice machine cleaning recorded monthly).
