Comments: General sanitation - very good! -Handsink at prep area and in back area both adequately supplied with hot and cold running water, soap and paper towel. -3-compartment sink with drain plugs available for adequate washing, rinsing and sanitizing using manual dishwashing method. -QUAT sanitizer at 200ppm concentration. -QUAT sanitizer bucket with wiping cloth at 200ppm QUATS concentration. -No signs of pests during time of inspection. -All personal items stored away from food storage. -Knives in prep area stored in clean and sanitary manner. -All single-use items stored neatly and off the ground. -All dry storage placed off the ground. Temperatures: Walk-in cooler at 4C. Walk in freezer at -18C. Sandwich cooler with vegetables at 3C (top and bottom). Sandwich cooler with meats at 4C (top and bottom). Hot-holding for meatballs (in juice) probed at 68C. Hot holding for soup adequate - probed at 61C. Temperature logs maintained. Beverage cooler at 0.9C. Thermometers available in all coolers. Light-shield on walk-in cooler light. Time-stamps used - observed on bread and meat sauce. Administration: Operating permit visible. FoodSafe trained staff on duty - verified during inspection (expires October 31, 2023). Note: Beverage/soft drink dispenser not in use at this time. (observed in clean and sanitary manner)
