Observation:
1. Several food containers and bowls in walk-in cooler stored without a cover.
2. Two large cans of tomato paste left opened in walk-in cooler.
3. Several containers stored direcly on floor of walk-in cooler.
4. Several boxes stored directly on floor in walk-in freezer.
5. All spices stored on shelf under kitchen prep counter stored without covers.
6. One large can of chickpeas re-used as a spice storage container under kitchen prep counter.
7. Several spice containers in kitchen dry storage area uncovered.
Corrective Action(s):
- Place food-grade covers on all uncovered food containers/bins/bowls and spices.
- Ensure that once a canned product has been opened, any leftover food contents are transferred to a food-grade container.
- Do not re-use empty cans to store food products.
- Re-organize walk-in freezer so that all boxes are stored off the floor.

Ensure all food products and containers are stored at least 6 inches off the floor.

Observation:
The following areas require cleaning:
1. Ceiling panels above dishwashing area and cookline.
2. Tile wall beside dishwasher.
3. Area behind dishwasher.
4. Floor of kitchen dry storage area.
Corrective Action(s):
Clean all the areas listed above. Ensure you are following your sanitation plan for daily, weekly, monthly and seasonal cleaning. To be corrected today.
