Observation (CORRECTED DURING INSPECTION): Staff observed to bang pan against organics waste bin and rinse then place in clean area. CORRECTED DURING INSPECTION - EHO explained proper wash-rinse-sanitize-air dry methods for ware washing and pan was sanitized for 2 minutes in 200ppm chlorine.

Corrective Action(s): Ensure washing of dishes are always:
1) wash
2) rinse
3) Sanitize
4) Air dry
This ensures all pathogens are destroyed and no new ones are added to dishes prior to placing away as clean.
Review this procedure with all staff.

ITEMS CORRECTED:
- Hot holding units at temperatures greater than 60 degrees Celsius. All meat and rice items internal temperatures at greater than 60 degrees Celsius.
- Chlorine sanitizer solution in third compartment sink
- Empananda roller has been cleaned
- Hand sinks adequately supplied
- Mop sink empty during inspection

NOTE: Facility to open commissary kitchen in VCH. When this facility opens it will supply prepared and fully cooked food items to this restaurant. This will eliminate some of the space constraints on the facility. Ensure proper food temperatures are maintained during food transportation. A refrigerated vehicle is required for food transportation.
