Observation (CORRECTED DURING INSPECTION): Quats dispenser at two compartment sink only dispensing 50ppm quats. Spray bottles at concentration of 30ppm as well. Quats concentration is required to be 200ppm to effectively sanitize food contact surfaces and achieve an acceptable reduction in foodborne pathogens.
Corrective Action(s): Must manually mix quats to the required concentration of 200ppm for washing utensils at the two compartment sink and for all quats sanitizer spray bottles until dispenser is repaired. Ensure that ALL employees are aware.
