Routine check of Candy Cafe. Waterpark closed during inspection. Cooler and freezers- satisfactory (4C and -18C). Keep records. Food ingredient information - reviewed. Staff are trained re accurate ingredient information. Ice to be made from potable water - ice machines on site. Reviewed cleaning of ice machines. Add to your sanitation plan/cleaning schedule. Hot water supply - Provide hot water (minumum temperature of 38C at hand sink and 45C at double sink). Hand sink - has liquid soap and paper towels. Hot water required. Soft serve machine - new: Follow manufacturer's directions for cleaning and sanitizing equipment. Add to your sanitation plan/ cleaning schedule. Dipper well available. Provide drain standpipe. Sanitation plan - review and update. Post poster. Use quats sanitizer 200ppm or chlorine 100-200ppm to sanitize scoops, etc. Copy of report to be emailed to operator.
