Observation (CORRECTED DURING INSPECTION): A dozen raw shelled eggs were stored under ambient room temperature in the bakery section. Staff stated the eggs needed to be warm first before used for baking goods.
Corrective Action(s): Staff must kept raw shelled eggs in the cooler when not in use. Eggs used for baking can be taken out at room temperature for 2-4 hours maximum. Take out the amount of eggs needed for the day and discard the eggs taken out when not used.

Observation (CORRECTED DURING INSPECTION): One sanitizer spray bottle was measured with 0 ppm bleach in concentration.
Corrective Action(s): Staff discarded and refilled the bottle with 200 ppm bleach sanitizer.

Kitchen Area:
- Coolers maintained at 4C or less.
- Walk-in and half stand-up freezers functional.
- Hot food hot held above 60C.
- Hand washing stations provided with hot/cold running water, liquid soap and single-use paper towels.\
- Low temperature dishwasher dispensed 100 ppm bleach sanitizer at plate level.
- Food covered while stored in coolers.
- 2 compartment sink available for manual dishwashing. Sink plugs available.
- General sanitation satisfactory.
- No pest activities observed at the time.
- Temperature records maintained and available for review.

Bar Area:
- Hand sinks provided with hot/cold running water, liquid soap and single use paper towels.
- Beer and dessert coolers at 4C.
- Glass washer not in use at the time. Operator wanted to remove the glass washer from the premise and use the dishwasher for glass washing. Submit a updated floor plan to the Environmental Health Officer for approval before removing the glass washer.
