Observation (CORRECTED DURING INSPECTION): No sanitizer detected in sanitizer bucket at back of kitchen. Test strips available
Corrective Action(s): Ensure all sanitizer solution is prepared daily at 100 ppm to 200 ppm chlorine and changed every 4 hours or when solution becomes cloudy/ dirty. 1 cap full of bleach per have bucket of water. Post instructions and train staff.

Corrective Action(s): Ensure all hard to reach areas are routinely cleaned within a reasonable time frame. Reviewed breaking kitchen up into zones to clean all areas within a month for example.

Observation: Paper towel used to line shelves with clean dry dishes.
Corrective Action(s): Ensure all surfaces in kitchen are smooth, durable, easy to clean and non-absorbent. Paper towels do not meet this requirement. Put only clean dishware away on shelving that meets the above standards.
Removed all liners that don't meet these standards and ensure all shelves are routinely cleaned/wiped down.
