Observation:
OBSERVATION #1: One of the prep coolers is operating at 15C (air temp). Staff say that all items were just prepped and placed in the unit for the lunch rush and that no items are stored in this cooler overnight. At the moment, this cooler must not be used to hold potentially hazardous foods for longer than 2 hours until it is repaired.

OBSERVATION #2: The walk-in freezer is not working. The kitchen facility was approved based on having a working walk-in freezer to accomodate the amount of food storage needed for this size of kitchen.

Corrective Action(s):
CORRECTIVE ACTION #1: Discard all potentially hazardous foods held >2 hours in this prep cooler. Discontinue using prep cooler and repair it ASAP. Cooler must be capable of maintaining less than or equal to 4 degrees Celsius. Record temperature in log daily.
CORRECTIVE ACTION #2: Repair the walk-in freezer. Ensure that it is capable of maintaing less than or equal to - 18C.

Cloths soaking in bleach sanitizer at 100 ppm
Cloths soaking in quats sanitizer at 200 ppm
High temperature dishwasher reached 71C at the plate level upon final rinse cycle (min/max probe thermometer)
All handsinks equipped with hot and cold running water, liquid soap and paper towel
No signs of pests observed. Pest-control boxes observed.
All (other) coolers operating at </= 4C; freezers at </= -18C. One walk-in cooler is not turned on and is being used as a food storage room.
Hot-holding soup, sandwiches, etc. at >/= 60C
Temperature log observed for coolers, freezers and dishwasher temp.
Food storage is OK: 6" off the ground, covered and labelled
Good personal hygiene noted by staff
Permit posted with valid decal
General sanitation is good
