Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food --i.e. 14 sandwiches, 6 chunky peach pieces, 6 (1 L) fresh creams, 2 (473 mL) creams, 3 (1 L) milk in jugs, 15 (325 mL) milk to go's, 18 (473 mL) milk to go's --were stored above 4 degrees C (40 degrees F) (actual temperatures ranged between 8 to 9 degrees C). Temperature of the walk-in-cooler was not checked during this morning.
Corrective Action(s): Ensure that all cold potentially hazardous food is stored at 4 degrees C (40 degrees F) or colder. The potentially hazardous food above 4 degrees C (40 degrees F) was discarded by staff during the inspection.

Observation: The walk-in-cooler was above 4 degrees C (40 degrees F) (actual temperature: 8.2 degrees C).
Corrective Action(s): Ensure that the walk-in-cooler is repaired to maintain it at a temperature of 4 degrees C (40 degrees F) or colder; Correct by June 21, 2016 (before your next delivery). Do not store any potentially hazardous food (e.g. sandwiches, milk, sliced peaches etc.) in this cooler until it is repaired to 4 degrees C or colder and this is verified by a Public Health Inspector from Fraser Health -effective immediately.

Temperature Controls:
Aquafina cooler was 4 degrees C (40 degrees F) or colder.
Ice cream freezer was -18 degrees C (0 degrees F) or colder.
Monster drink cooler and Rockstar energy drink cooler was 4 degrees C (40 degrees F) or colder.

Temperature Monitoring and Records:
-Initially, temperature records from April 2016 were available however "50" degrees F temperatures were recorded for the rear cooler (walk-in-cooler). The door leading to the backroom was locked and then the manager found temperature logs from the back area for this month which indicated that the walk-in-cooler was at 40 degrees F yesterday at 11 PM.
-It was discussed that daily temperature records should be kept for all of the coolers and freezers. Additional thermometers should be placed near the display cooler doors to monitor the temperature near the doors. It was discussed that the manager should audit the temperature log sheet at least on a biweekly/monthly basis to verify that the refrigeration units are maintaining temperatures at 4 degrees C (40 degrees F) or colder.

Sanitation:
200 ppm chlorine was available in the spray bottle.
NOTE: The bleach in the stock bottle is running low and will need to be replaced by next week.
Food storage areas were clean and organized.

Hygiene:
Liquid soap, hot and cold running water, and paper towels were available at the handwashing station.
